Oregon Cooking Schools
Salmon is popular and prevalent in Oregon and is prepared in a myriad of ways. Along the coast, you'll have a hard time choosing among Dungeness crab, several preparations of clams and oysters, halibut, tuna, ling cod, snapper, rock bass and the so-called "freshwater lobster" (really a crawfish).
Authentic Native American foods -- Indian fry bread, clay-baked game birds and barbecued salmon -- are served up in communities with a population of American Indians: Warm Springs is one. Eastern Oregon is beef-raising country, and the steaks are excellent. Oregon's dairies turn out excellent cheeses, including Tillamook and Bandon cheddar. Fruits and nuts are found throughout the state (pears in Medford, apples in the Hood River Valley, filbert nuts in the north, and peaches, walnuts and the indigenous Boardman melon). On the coast near Bandon, you'll find specialty cranberry confections, and be sure to try Oregon blackberries -- they are extraordinarily large and tasty.
hanterelles, shiitake, enoki, morels, lobster and oyster mushrooms are found throughout the state. Oregon wines are very good (a number of wineries have tours and tastings), and around Portland you'll find some of the best microbreweries in the U.S. (many offer tours).
